Pina Colada Parfait

I must have been wishing for summer when I made this tasty dessert! This dish is simple and fast to make, low in sugar and easy to digest. Plus it has the benefits of eating gelatin.

Pina Colada Parfait
2 packets of Gelatin
1/2 C pineapple juice (from canned pineapple tid-bits)
1 1/2 C orange juice
2 T honey (or to taste)
1 C pineapple tid-bits
1 can coconut milk- stir before using.

In a medium size glass bowl pour in the pineapple juice. Sprinkle the gelatin packets over top.
While that is soaking, heat the orange juice to boiling.
Pour the hot juice over the gelatin mixture and stir well.
Add the honey and pineapple tid-bits, mix well.
Pour the stirred coconut milk slowly over the jello mixture and spread it gently over the top with a spatula.
Cover with plastic wrap and chill for 3 hours before serving.
