Blueberry Donut Pancakes



The first time I ate these I sighed audibly, I couldn't help myself.  These are so good.

I used the silver dollar pancakes recipe from Elana's Pantry and added fresh picked blueberries.  They are cooked in butter and topped with honey butter.  This is the key to making them taste like blueberry donuts but they can certainly be cooked in other oils and topped with other condiments.

Blueberry Donut Pancakes

3 eggs
1 T water
1 T vanilla extract
2 T honey
1 1/2 C blanched almond flour
1/4 tsp salt
1/4 tsp baking soda
3/4 C blueberries
2 T butter

Preheat a cast iron stove top skillet to medium heat and melt the 2 T of butter

Whisk together the eggs, water, vanilla and honey
Mix in the dry ingredients
Gently fold in the blueberries

When the butter is bubbling drop heaping tablespoons of batter onto the skillet
Watch closely as these can burn very easily- you may need to reduce the heat a bit
Flip after a couple minutes when the tops look slightly dry- they don't bubble on top as much as traditional pancakes do.
Cook a couple of minutes on the other side and repeat.

Top with butter and honey and melt into sweet, sweet heaven.
