Tasty Salmon Cakes

My mom used to make us salmon cakes as kids which we would eat with ketchup.  The flavors in these cakes are a little more grown up and so tasty you'll crave them the next day.  I did have to give in and eat the leftovers with ketchup- still good!  

Tasty Salmon Cakes
serves 8
2 cans salmon
1 tsp salt
fresh ground pepper
1/2 tsp garlic powder
2 tsp dried onion
1 tsp mustard powder
2 T blanched almond flour
1 egg
2 T olive oil
1 tsp lemon juice
2 T butter or olive oil

Heat a pan or iron skillet over medium high heat and melt the 2 T of butter
Place all ingredients in a bowl and mix well with a fork
Lower heat to medium 
Scoop salmon mixture into hot skillet using an ice cream scoop
Press down tops of salmon cakes using a flat spatula
Cook 8 minutes on each side to create a crispy crust
Remove from pan
Serve on top of a simple spinach salad with red onion, orange slices and a lemon olive oil drizzle.
