This cake is pretty rich and slightly exotic. Made with butter, four eggs and a hint of ginger and cardamom, it's a wonderful treat! I've been eating it slightly warm, topped with a little extra butter and honey. It's already an indulgence, so why not take it all the way!? This recipe has been adapted from "Almond Pound Cake" from TLC.
Cardamom Cake
1/2 C butter (one stick), softened
1/2 C home made yogurt
1/2 C + 2 T honey
2 T palm sugar
4 eggs
1 tsp vanilla
2 1/2 C blanched almond flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground ginger
1/4 tsp ground cardamom
Preheat the oven to 350
Butter a square glass baking dish
Beat the butter, yogurt, and honey
Add the eggs one at a time and beat in thoroughly, add the vanilla
In a separate bowl mix together the dry ingredients
Add slowly to the wet ingredients
Bake 45-55 minutes
