A great site for recipes, products and coconut information is www.freecoconutrecipes.com and this recipe has been adapted from their Gluten Free Coconut Flour Chocolate Chip Cookie recipe. I've been trying more recipes with coconut flour and coconut oil together. Coconut flour on its own has a very mellow, sweet flavor. Adding coconut oil brings out the overall coconut flavor of the dish. These cookies are little gems. One is enough as they're pretty dense. They're best eaten right out of the oven when the flaked coconut is crisp and toasty. I've also been known to dip these in peanut butter...a very yummy treat.
Gluten Free Coconut Flour Cookies
1/4 tsp vanilla
1/4 C honey
1/4 C coconut oil, melted
1/16 tsp salt
1/2 C coconut flour
1/2 C dried flaked coconut, unsweetened
Preheat the oven to 375
Whisk the eggs, vanilla, honey and cooled, melted coconut oil
Mix in the salt and coconut flour, mixing well. Stick with it until all of the lumps are gone!
Using a mini icecream scoop, scoop cookies onto a silc pad-lined baking sheet
Press a few pieces of dried flaked coconut on top of each cookie, pressing down into the dough
Bake 15 minutes until toasted brown
