These cute gluten free, dairy free cookies taste like graham crackers! They're a great mini size and satisfy a craving for something sweet with a hint of eastern flair. These began with Sesame Seed Crackers from Elana's Pantry. I wanted to make a honey sesame stick type of snack but the batter turned thin and wet with the addition of honey. So, voila! Here you have these surprisingly delicious cookies. I love kitchen mistakes.
Sesame Seed Cookies
1/2 tsp olive oil or coconut oil, melted
1 egg
1/2 tsp salt
1/4 C white sesame seeds
3 T honey
2 C almond meal
1/4 tsp cinnamon
Preheat the oven to 350
Whisk the oil, egg and honey
Mix in the almond meal, salt, sesame seeds and cinnamon. The batter will be slightly thick.
Using a mini ice cream scoop,
Place scoops of dough evenly on a large baking sheet lined with a silc pad
Bake for about 15 minutes
Makes 15 small cookies

Ypu surely love almond flour a lot! I am not a big fan of it , I prefer millet & coconut flour etc. I might tweak them a bit!
Yes, I love almond flour! Following the SCD and GAPS diets, I'm avoiding millet. But I can still eat coconut flour on those diets- I'm curious how they'll turn out. Please send a link when you try it!
