I LOVE strawberry season! I had the sweetest strawberries this weekend from a vendor at Eastern Market in D.C. The berries came all the way from South Carolina, but they were worth it. Sweet, tart, and flavorful.
I also love using my Cuisinart Electric Ice Cream Maker. It's so simple and easy and works well with yogurt, dairy or coconut milk. The longer I've been on the GAPS diet, the more I can tolerate dairy. I have made a few real ice creams using milk and cream, but I love trying these diary free recipes that are just as delicious as their cream counterparts.
My next adventure is SCD and GAPS friendly white bean ice cream- who knew!?
Dairy Free Strawberry Coconut Ice Cream
1/2 C honey
2 tsp vanilla
1 tsp lemon juice
1 1/2 C fresh strawberry puree, begin with about 2 C fresh chopped strawberries
Blend the fresh strawberries in a cuisinart mini blender (a necessity in my little kitchen)
In another bowl, mix all of the ingredients, including the strawberry puree, until the honey is dissolved
Pour into an electric ice cream maker, turn on and mix for 30 minutes (make sure you've frozen the canister for 24 hours before use)
Transfer to a freezer safe ice cream container
