Chewy Trail Mix Cookies

Full of tasty, chewy goodness, these Chewy Trail Mix cookies are a gluten free, high protein, low carb, refined sugar free cookie that doubles as a mid afternoon snack, or even a quick breakfast.  Based on "Monster Cookies" in Breaking the Viscious Cycle, an SCD cook book by Elaine Gottschall, I made a few changes and devour these any time I make them.  A friend of mine who can eat gluten said they taste like Kashi Happy Trail Mix Cookies!  I think the addition of dark chocolate chips would be perfect in these, although I enjoy them just the way they are. 

I also made almond milk for the first time.  It was much easier than I thought, I can't believe I haven't tried it until now.  I used the tutorial at LusaOrganics.  Very easy step by step instructions with photos.  With the onset of summer, this creamy almond milk hits the spot! 

Chewy Trail Mix Cookies
makes 15 cookies

2 1/2 C blanched almond flour
3/4 C organic raisins
1/4 C walnut pieces
1/4 C pecan pieces
3/4 C unsweetened shredded coconut
1/2 C butter melted (one stick)
1/2 C honey
1 egg
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon

Preheat the oven to 350
Whisk the egg, honey and cooled, melted butter
Mix the blanched almond flour, baking soda, salt, cinnamon, raisins, walnuts, pecans and coconut
Blend the dry mixture into the wet mixture
Using an ice cream scoop for consistency, scoop 3/4 full scoops onto a baking sheet lined with parchment paper or silc pads
Bake in the center of the oven for 15-20 minutes
