Gluten Free Sticky Toffee Pudding

My final installment in my Better Farm series of baked goods is this Sticky Toffee Pudding.  It is quite indulgent, and quite amazing.  Our last night at the farm we ate a delicious group dinner and capped it off with this cakey pudding. 

My gluten free friends out there will understand- it is so important to have treats when changing your whole diet and way of life around.  And then going on the SCD or GAPS diets- please!  There are times when you must indulge.  Luckily this sweet dessert satisfies my growing list of criteria: gluten free, sugar free, low carb, high protein, and low lactose while still qualifying as a treat.

Gluten Free Sticky Toffee Pudding

Cake:
½ C butter melted
¾ C honey
3 eggs
2 ½ C blanched almond flour
½ tsp salt
½ tsp baking soda
1 T cinnamon

Topping:
½ C Butter
½ C honey
½ C each toasted and chopped almonds and walnuts
1/4 tsp salt
1 tsp water

Butter a square glass baking dish
Preheat the oven to 350
Prepare the cake batter by whisking the cooled melted butter, eggs and honey
Mix in the blanched almond flour, baking soda, salt and cinnamon
Bake for 35-40 minutes until the cake is just firm to the touch and is a light golden color

About 15 minutes into baking, prepare the topping
Melt the butter and honey over medium heat on the stove top
Increase the heat to medium high and bring to a low boil
Cook for 5 minutes, stirring frequently (and carefully)
After five minutes, turn off the heat and pour in the toasted and chopped nuts and salt
Mix well
Pour the topping over the cake when it is finished baking
If the topping solidifies before the cake is done, simply reheat on the stove top over low heat and a dash of water
Let cool so that the topping does not burn devouring mouths, but otherwise slice into squares and serve
The pieces are not meant to stay square, they should crumble and be ultra gooey
