Peanut Butter Layer Bars (Gluten and Egg Free)

Creamy and rich, salty and sweet.  Enjoy these tasty layer bars with a cup of strong black tea and you will be in heaven.  While sweet and indulgent, you can still feel good eating these high protein, refined sugar free cookie bars. 

Peanut Butter Layer Bars (Gluten and Egg Free)
makes 16

Cookie Layer
2 C blanched almond flour
1/4 C grapeseed oil or melted butter
1/4 C honey
1/4 tsp salt

Peanut Butter Icing Layer
1/2 C butter melted *try this with margarine for a vegan treat!
1 C crunchy, salted peanut butter
1 tsp vanilla
1/2 tsp salt
3/4 C honey

Preheat the oven to 350
Mix the shortbread ingredients and press into a square glass baking dish
Bake for 20-25 minutes until light golden brown
Remove from the oven and let cool completely
While the shortbread cools, prepare the icing
Combine the Peanut Butter Icing ingredients until smooth
Pour onto the shortbread and spread evenly
Chill until set, about an hour
Slice evenly into 16 squares

We have made these more than a few times to share with friends, bring to events so that we could have something to eat and just for ourselves to enjoy. They are good. People who eat sugar and flour and processed food have commented on their being good too. Thanks alot for the recipie!
