Snickerdoodles make me think of my friend, Anne. Along with french toast and mac and cheese- her other specialties. Traditionally made with cream of tartar, snickerdoodles are a delicious morsel of butter cookie with a sprinkle of cinnamon on top. And just like Anne, they're simple and classy, also really pretty.
Fresh out of the oven, these have a slight crunch and a chewy inside. Once you stow them away in tupperware or in the fridge, they become all chewy. I like to give them a little re-start with a slight toasting before eating them the next day.
Chewy Grain Free Snickerdoodles
1/2 C butter melted
2 eggs
1/3 C honey
2 tsp vanilla extract
2 1/2 C blanched almond flour
1/2 tsp salt
1/4 tsp baking soda
cinnamon for sprinkling
Preheat the oven to 350
Line a baking sheet with parchment paper
Whisk together the cooled melted butter, eggs, honey and vanilla
Mix in the blanched almond flour, salt and baking soda
Using a mini ice cream scoop, dollop cookies evenly across the baking sheet
Sprinkle cinnamon on top
Bake for 15-18 minutes until lightly golden brown
