I recently posted another recipe using this cheese. It's so good that I re-stocked this weekend at the farmer's market and was really pleased with this pizza recipe. The cheese has a mild goat flavor and melts nicely without becoming too gooey. I like to think of this pizza as more of an Italian style. Simple, pure toppings that are full of flavor and allow each other to shine.
Raw Goat Cheddar and Caramelized Onion Pizza
makes 2 small pizzas
4 tsp olive oil
1/2 tsp salt
1 tsp each dried oregano and basil
2 C blanched almond flour
1 C strained crushed tomatoes
1 block of Raw Goat Cheddar, sliced
1 C caramelized onions
First make the crust by whisking the eggs, olive oil, salt and dried herbs
Mix in the blanched almond flour and spread into two pizzas on a parchment lined baking sheet
Place in the oven then turn on to preheat to 350
Bake the crust until the oven has preheated, or leave in a few minutes longer
Remove from the oven and top with the strained crushed tomatoes, raw goat cheddar slices and caramelized onions.
Bake 10-20 minutes until the cheese is melted and the tomatoes cooked.
