Classic Coconut Flour Waffles (Dairy Free)

These certainly are a classic.  Simple to make and really yummy for a brunch or quick breakfast.  Try topping them with cinnamon honey butter or cinnamon yogurt sauce- even better!

Classic Coconut Flour Waffles
makes 10-12

8 eggs
1/4 C coconut oil melted
1/4 C honey
1 T + 1 tsp vanilla
1/4 tsp baking soda
1/4 tsp salt
1/2 C coconut flour

Preheat the waffle iron on a medium low setting
Whisk the eggs, cooled melted coconut oil, honey, and vanilla
Mix in the coconut flour, baking soda and salt
Using a 1/3 C measuring cup, begin to bake the waffles
Make sure to undercook them slightly or they will be too dry
