Lisa's Lobster & Shrimp Salad Roll

Happy Wedding Lisa! 

We adore Lisa and were so happy to throw her a classy but fun wedding shower.  The Lobster & Shrimp Salad Rolls were the star attraction.  Served to guests in sliced pretzel rolls, people came back for seconds.  Served to me on a plate, I hid some to eat at home later! I must confess that I have officially stolen this recipe from our friend Eva's husband- a professional chef.  I had no idea cumin and paprika were so good in a seafood salad.  This will definitely be the way I prepare this dish from now on.

Lobster & Shrimp Salad Rolls
serves 24

2 C frozen lobster claw meat
2 C frozen and peeled shrimp
Juice of 1-2 lemons
1/2 tsp salt
pepper to taste
1/4 tsp ground cumin
1/4 tsp paprika
1 celery stalk minced
1 C mayo

Defrost the frozen lobster claw meat and the frozen shrimp
Drain well and pat dry with a clean paper towel
Chop into bite size pieces
In a separate bowl, mix together the mayo, lemon juice, cumin, paprika, celery, salt and pepper
Mix the lobster and shrimp into the dressing and let sit 1 hour to overnight so the flavors meld
Remove from the fridge and taste to adjust the seasonings
Spoon into sliced pretzel rolls or into a serving dish and serve as a cold salad
