The Almond Flower Bakes: My First Order

This month my friend, Sara threw a baby shower for her gluten free friend and asked me to bake the sweet treats for the occasion.  On tap were a double batch of Peanut Butter Layer Bars, a classic shortbread cookie topped with indulgent peanut butter icing.  And because the mom-to-be is having a girl, we decided on rich chocolate cupcakes with strawberry buttercream frosting.  I used the recipe for Mini Strawberry Chocolate Cupcakes, making the cupcakes large and omitting the chocolate and strawberry pieces.  Then topped them with fresh strawberry buttercream icing- a mix of strawberries, butter and confectioner's sugar.  I'll post the recipe soon, even though it's not sugar free.  Sometimes you need a real icing, and this one is amazing!
