Banana Muffins (No Added Fat & Dairy Free!)

Great for breakfast and snack, these Banana Muffins are a new favorite.  Not overly sweet and a little crunch from the salted pepitas on top make for a great little muffin.  And with no dairy or added fats, these are still moist from the bananas and satisfying from the almond meal!  Enjoy!

Banana Muffins (No Added Fat & Dairy Free!)
makes 12

4 super ripe bananas
1/4 C honey
1 T vanilla
2 eggs
2 1/2 C almond meal (from Trader Joe's)
1/2 tsp salt
1/2 tsp baking soda
1/4 C-1/2 C salted pepitas (pumpkin seeds)

Preheat the oven to 350
Line a muffin tray with paper liners
In a food processor (this made for a much smoother consistency) blend the eggs, honey, vanilla and bananas
Then blend in the almond meal, salt and baking soda
Using an icecream scoop, scoop evenly into the 12 muffin cups
Top with pepitas (optional)
Bake 20-25 minutes until the muffins are lightly brown and firm
