Greek Layer Dip (Naturally Gluten and Grain Free)


Surprisingly good, really easy and a crowd pleaser.  More people than I thought would, loved this dip.  I felt the same way when I first had it at The Vineyard, brought by my friend and new mom, Christy.  The creamy hummus and yogurt duo, the rich feta and the refreshing tomatoes and cucumber come together for a really nice summer dip.  Serve with Trader Joe's new Quinoa and Corn Chips or for a Grain Free Dipper, serve with veggie sticks and endive leaves.

Let's talk hummus for a quick second.  I still generally follow the SCD and GAPS diets, while I do wander more often.  Hummus is made predominantly with chick peas- which are not on those diets.  I still have a hard time digesting them, they are just very very starchy.  Rustico near us serves an awesome GF pizza on a chickpea crust- but lordy, I can only eat one piece before I am full beyond time. So for this dip, I just ate a little.  You could definitely substitute a white bean dip for the hummus- which I would have done if buying hummus was not soo easy.

Greek Layer Dip (Naturally Gluten and Grain Free)
serves 10 

2 containers hummus
2 small containers plain greek yogurt (or about 1 1/2 C homemade yogurt)
1 block of feta cheese, diced
1/2 long english cucumber, diced
5 small, or 1-2 large tomatoes diced

First spread the hummus evenly as the bottom layer
Then the plain yogurt
Sprinkle the feta on top
And then on top of that, the tomatoes and the cucumbers
Easy!
