Meyer Lemon Poppyseed Muffins





I really like eating a diet that is high in protein, lower in carbs, and pretty much sugar free.  The top benefits for me are the increased energy, better sleep and normal/even emotions.  However it's hard to buy pre-made gluten free foods that fit within those guidelines.  Sure there are a lot more gluten free foods available now.  I can easily find pastas, breads, crackers, and cookies- and I have choices!  But finding store bought grain free, sugar free and gluten free foods is almost impossible.

Which is why I like to bake at home.  I can't find the types of baked goods I want in stores and I rely heavily on the different muffins, cookies and rolls I make as go-to snacks during my day. I made these delicious little numbers this week when I was almost out of honey, we had only 1 egg left, I had run out of butter and I wanted a different flavor than adding coconut oil.  I was scrolling my favorite food blogs and found this amazing recipe for Vanilla Poppyseed Cake Doughnuts at Urban Poser.  While jealous that I don't have a doughnut pan and impatient to try more of Jenni's recipes, I was pleasantly surprised with these mini muffins.


Meyer Lemon Poppyseed Muffins
makes 24 minis

1 egg
1/4 C plain yogurt (I used whole milk plain yogurt from Trader Joe's)
6 T honey
1 tsp vanilla
1 tsp lemon zest (from 1 small lemon)
2-4 tsp lemon juice (from the same small lemon)
2 tsp poppyseeds
1 1/2 C blanched almond flour
1/2 tsp salt
1/2 tsp baking soda

Preheat the oven to 350
Line a mini muffin baking sheet with paper liners
Whisk the egg, yogurt, honey, vanilla, lemon zest and lemon juice
Mix in the blanched almond flour, salt, baking soda and poppyseeds
Use a mini ice cream scoop to evenly fill the 24 mini muffins
Bake 12 minutes until slightly golden brown on top
Remove from the oven and let cool before serving

Where did you find Meyer Lemons? I haven't seen them anywhere!

great recipe I replace poppy lemen honey with fresh shreded baby spinach. came out very well - thanks you.
