Inspiration for some Spring Pies

I'm on a pie kick and these gluten free, grain free, sugar free, dairy free fruit and citrus pies caught my eye! I haven't tried a lot of cashew cream fillings but they get great reviews for being very smooth and creamy. I'm excited to try avocados in a version of key lime pie because how healthy is that! And I looooove lemon bars but traditional lemon curd is so so sweet, so a baked lemon custard with honey and egg yolks should do the trick.

School has started again after a much needed spring break and let's be honest, every teacher is counting down the days until summer. I've been prepping my lessons for the end of the year, planning an art club, tidying up and even organizing for next year. I never considered myself a planner or prep-ahead type of person but looks like I've become that! There's something about knowing what you're going to do that helps manage all the other stuff that pops up along the way.

Mini Coconut Lime Cream Cakes with a blend of macadamias and cashews and coconut oil

Key Lime Pie with avocados and a pinch of cayenne

Luscious Lemon Bars (nut free) with egg yolks, honey and coconut flour
